I have been on a low carbohydrate diet for a while and had some amazing results. Now I need to know what is the safest way to get back on a regular carb diet. I am worried that I gain fat in that transition.

Low carb diets are not healthy over the long term so it is great you have decided to change. No food group is the culprit in weight gain, it is just that people eat way too much of all foods. If you have been eating no carbs, then add some slowly like steamed veggies and salad. Then choose high fiber breads, whole wheat pasta, sweet potatoes, beans, and brown rice as excellent sources of carbohydrates.

I am over 60 now and so don't need the 2500 calories allotted to my group. I have therefore devised a diet and regime and this is part of it. I consume 1800 calories a day. On one side of the equation I eat 900 calories carbohydrates, and on the other side I eat 300 calories protein, 300 calories fruit and veg, 150 calories milk and 150 fat. When I want to lose weight (which will be now, after Christmas) I simply drop about 300 of the carbohydrates. When dieting I tend to drop surplus carbs my making sure I regulate their intake by eating a breakfast cereal such as porridge, which has 6 grams of fibre per 100 of product, thus keeping me healthy, and I don't tough potatoes rice or pasta as these are too low fibre to keep me regular.
